Brain development begins in the womb and continues with lifelong changes in synapses which are thought to underlie learning and memory. The human brain has an estimated one billion synapses per cubic millimetre. Although the brain represents only 2% of the body weight, it receives 15% of the cardiac output, 20% of total body oxygen consumption, 25% of total body glucose utilization, and is composed of approximately 12% lipids. For its relative size, the human brain draws heavily upon the body's resources.

In particular, one fatty acid known as docosahexaenoic acid (DHA) has been shown to play a key role in brain development and function. DHA is the most abundant essential fatty acid (polyunsaturated fatty acids, PUFAs) in the brain and retina. It comprises 40% of the PUFAs in the brain and 60% of the PUFAs in the retina. DHA is extremely important for early brain development and proper vision. Conversely, as we age a DHA deficiency has been associated with cognitive decline.  Unfortunately, due to modern farming practices there is less DHA available in the average diet than in the past.
